Vegan Spinach Dip

This Vegan Spinach Dip doesn't have any cheese or dairy, but you'd never know. Deliciously creamy and such a crowd-pleaser!

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onion diced
  • 2 teaspoons garlic minced
  • 12 ounces dairy-free cream cheese softened to room temperature
  • 1/2 cup dairy-free sour cream
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 24 ounces spinach thawed, frozen

Instructions

  1. In a large frying pan, heat the oil. Cook the onion and garlic until golden brown and the onions are soft, about 5 mins.
  2. Transfer to a large bowl and mix in the cream cheese, sour cream, paprika and salt.
  3. Wring the water out of the spinach as much as you can (I like to do this in a thin kitchen towel.)
  4. Mix the spinach into the rest of the ingredients.
  5. Serve!
