Ingredients

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 pound dried split peas rinsed
  • 7 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery, and sauté until onions are translucent, about 5 minutes.
  2. Add the rinsed split peas, vegetable broth, thyme, and smoked paprika to the pot. Stir to combine.
  3. Bring the mixture to a boil, then reduce heat to low and simmer, covered, for about 1 hour and 30 minutes, or until the peas are tender. Season with salt and pepper to taste.
