Vegan Stuffed Mushrooms

Ingredients

  • 12 button mushrooms large
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1/4 cup onion finely chopped
  • 1/2 cup breadcrumbs gluten-free
  • 1/4 cup vegan cream cheese
  • 1 tablespoon nutritional yeast
  • 1 tablespoon parsley chopped, fresh
  • 1/2 teaspoon thyme dried
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 375°F. Clean mushrooms with a damp cloth, carefully remove stems and finely chop them. Set caps aside.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and mushroom stems, sauté until softened. Add garlic, cook for another minute. Remove from heat.
  3. In a mixing bowl combine sautéed mixture, breadcrumbs, vegan cream cheese, nutritional yeast, parsley, thyme, salt and pepper.
  4. Fill each mushroom cap generously with the stuffing mixture. Arrange on a lightly greased baking sheet.
  5. Bake in preheated oven for 20 minutes or until tops are golden brown and mushrooms are tender.
