Vegan Valentine's Day Cake

Vanilla flavoured vegan Valentine's traybake cake with strawberry frosting.

Ingredients

  • 250 ml soy milk
  • 2 Teaspoons apple cider vinegar (sub for white vinegar or lemon juice)
  • 280 g self-raising flour
  • ½ Teaspoon baking soda
  • 160 g caster sugar
  • 140 g Vegan margarine, melted
  • 1 Teaspoon vanilla extract (or strawberry extract)
To top:
  • Strawberry frosting* (you can make your own or use this ready-made version)
  • Vegan-friendly heart sprinkles (I used Tesco's heart sprinkles)

Notes

  • *If you don't want to use strawberry frosting, you can just use a simple vegan vanilla buttercream and add pink food colouring to it.
  • Store in an airtight container at room temperature for up to 4 days.
