Vanilla flavoured vegan Valentine's traybake cake with strawberry frosting.

Ingredients
- 250 ml soy milk
- 2 Teaspoons apple cider vinegar (sub for white vinegar or lemon juice)
- 280 g self-raising flour
- ½ Teaspoon baking soda
- 160 g caster sugar
- 140 g Vegan margarine, melted
- 1 Teaspoon vanilla extract (or strawberry extract)
To top:
- Strawberry frosting* (you can make your own or use this ready-made version)
- Vegan-friendly heart sprinkles (I used Tesco's heart sprinkles)
Notes
- *If you don't want to use strawberry frosting, you can just use a simple vegan vanilla buttercream and add pink food colouring to it.
- Store in an airtight container at room temperature for up to 4 days.
