Vegan Vanilla Cake Recipe

Ingredients

Dry Ingredients
  • 2 cups self raising flour
  • 1 cup sugar
  • 1 tsp baking soda
Wet Ingredients
  • ⅔ cup vegan butter
  • 1 ½ cups dairy free milk such as almond or soy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
Vanilla Frosting
  • ⅔ cup vegan butter
  • 1 ½ cup icing sugar
  • 1 tsp vanilla extract
  • 1 tbsp almond milk
Decoration
  • ½ cup Sprinkles

Instructions

Make the Cake

  1. Preheat the oven to 350F (180C). Grease an 8" baking pan.
  2. Mix non-dairy milk, vanilla extract, and vinegar together. Let sit for a few minutes.
  3. In a large bowl, add all the dry ingredients. Add the vegan butter. Pour in the milk mixture and combine well with a wooden spoon.
  4. Pour the batter into a baking pan. Bake for about 60 minutes, or until a toothpick comes out clean.
Make the Frosting
  1. In a stand mixer, beat the icing sugar and dairy-free butter together. Add milk and vanilla extract. Whisk until you get a nice, creamy texture.
Assemble Cake
  1. Remove cake from the oven and let it completely cool down. With a sharp knife, cut the cake into 2 layers.
  2. Spread frosting on first layer then top it with the second cake layer. Finish frosting the outside of the cake. Add sprinkles.
