Ingredients

  • 2 ½ tablespoons of warm water
  • 1 tablespoon of ground flax seeds
  • 1 ¾ cups of vanilla plant-based milk (plain will work)
  • ⅓ cup of vegetable oil
  • 1 ½ teaspoons of vanilla extract
  • 2 cups of all-purpose flour (whole wheat will work)
  • 1 ½ tablespoons of granulated sugar
  • 1 tablespoon of brown sugar
  • 3 teaspoons of baking powder
  • ¼ teaspoon of salt
  • ½ teaspoon of ground cinnamon (optional)

Instructions

    Cup of Yum
  1. Turn on your waffle iron.
  2. In a small bowl, whisk together the warm water and ground flax seeds until thoroughly combined. Set aside for 10 minutes.
  3. In a medium bowl, whisk together the plant-based milk, vegetable oil, and vanilla extract. Set aside.
  4. In a large bowl, whisk together the flour, both sugars, baking powder, salt, and ground cinnamon (if using).
  5. Create a well in the center of the dry ingredients and pour in the plant-milk mixture and flax mixture. Whisk gently, just until combined. Make sure to not overmix.
  6. Scoop the desired amount of batter onto the preheated waffle iron. Follow your waffle iron instructions to cook. Repeat with the remaining batter until all the waffles are cooked.

Notes

  • measuring cups
  • Measure your ingredients with a kitchen scale: It’s much more accurate than measuring cups and will give you light and fluffy waffles every time!
  • Do not overmix the waffle batter: Gently fold the wet ingredients into the dry mixture until they just come together and no dry flour is left behind. A few lumps in the batter are okay!
  • If the batter is too thin: Gently stir in a little more flour until it’s a bit thicker. If it’s too thick, thin it with a splash of plant-based milk.
