Vegan Waffles
Light, fluffy, and delicious Vegan Waffles are calling your name. Add on all your favorite waffle toppings and dive in fork first!
Ingredients
- 2 flax eggs 2 tbsp ground flax seeds + 6 tbsp water
- 2 cups all-purpose flour
- 3 tbsp white sugar organic for vegan-friendly
- 1 tbsp baking powder
- 1 tsp ground cinnamon optional
- ½ tsp salt
- 1 ¼ cups almond milk plain
- ⅓ cup canola oil
- 1 tsp vanilla extract
Optional Toppings
- fresh berries
- maple syrup
Instructions
- Preheat waffle iron to medium temperature, and spray with nonstick cooking spray.
- In a small bowl, make the flax eggs by stirring together the ground flax and water; allow to sit at least 10 minutes.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate smaller bowl, stir together flax eggs, almond milk, canola oil, and vanilla extract.
- Pour the almond milk mixture into the flour mixture.
- Stir until just combined (some lumps are okay).
- Spoon batter onto waffle iron and close the lid. The exact amount of batter to use will vary based on the type of waffle maker you have; follow the manufacturer’s directions.
- Once waffles are fully cooked, remove them from the iron and serve immediately with maple syrup and fresh fruit.
Notes
- This recipe made 6 large waffles in my waffle iron, but the number of waffles you get will vary based on the size of your waffle iron.
- This is a great base waffle recipe. You can experiment with variations such as adding cocoa powder for chocolate waffles, adding chopped fresh berries, or shaking in your favorite spices.
