Ingredients

  • 4 oz (125g) cellophane noodles aka mung bean noodles or glass noodles
  • 2 tablespoons vegetable oil
  • 1 onion quartered, small
  • 5 shiitake mushroom cut into pieces, whole fresh
  • 3 carrot cut into thin strips, mini
  • 2 oz (60g) bean sprout
  • 1 oz (30g) cabbage shredded
  • 1/4 cup water
  • 1 tablespoon oyster sauce or to taste
  • 1/4 teaspoon white pepper
  • 1 scallion cut into thin strips, stalk

Instructions

  1. Soak the noodles in warm water until they become soft, about 15 minutes. Drain the water and set the noodles aside.
  2. Heat a wok over medium heat and add the oil. Toss in the onion and stir-fry until the mushrooms, carrots, bean sprouts, and cabbage are slightly wilted.
  3. Add the water, oyster sauce, and white pepper, then stir to combine.
  4. Add the noodles and stir continuously until they are cooked through.
  5. Toss in the scallions, give a few quick stirs, and serve immediately.
