Vegetable Orzo Soup (Easy!)
Simple yet delicious! This cozy soup comes together fast, and is easy to prepare & customize with your own favorite veggies.
Ingredients
- 1 yellow onion small
- 1 carrot
- 4-5 cloves garlic
- 8 oz. gold potato (about 1 medium/large)
- 3/4 cup sweet peas (I use frozen)
- 3/4 cup sweet corn (I use frozen)
- 4 cups vegetable broth
- 15 oz. diced fire-roasted tomatoes canned
- 1/2 cup orzo pasta (about 3 oz.)
- 1 tsp. Italian seasoning
Stir-in (optional but recommended):
- 2 Tbsp. parsley fresh, chopped
- 1-2 tsp. apple cider vinegar
Instructions
- Dice onion and carrot. Mince garlic. Dice potato in small bite-sized pieces.
- In a stockpot over medium-high heat, sauté onion and carrot for 7-8 minutes. (I use 3 Tbsp. water/broth for oil-free sauté method, adding more as needed.)
- When onion is soft, add garlic, potato, peas, corn, and Italian seasoning. Stir and sauté for 2-3 minutes.
- Add broth and tomatoes. Bring to a light boil. Then reduce heat, cover, and simmer for 5 minutes.
- Add orzo. Simmer for about 10 minutes, stirring often. (I find orzo has a tendency to stick to the bottom so it's best to stir often.) When orzo is just tender, turn off heat.
- Stir in apple cider vinegar and fresh parsley. Serve with salt & pepper to taste if needed. (Be aware the soup continues to thicken as it sits and the orzo soaks up more broth. It's best not to overcook the orzo.)
Notes
- Swaps: Change it up with garbanzo beans, white beans, green beans, zucchini, celery, spinach, bell pepper, broccoli, cauliflower, kale, etc.
- Gluten-free option: Use GF orzo (such as Jovial brand made from organic cassava flour). Or simply use your favorite GF small pasta, or substitute quinoa or rice instead.
