Ingredients

  • Olive oil spray
  • 1 tablespoon minced ginger
  • 3 garlic cloves minced
  • 4 ounces Shiitake mushrooms sliced (about 1 ¾ cups)
  • 1 medium zucchini chopped (about 1 ½ cups)
  • 1 cup cooked quinoa
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 cup spinach leaves

Instructions

  1. Heat a large nonstick skillet over medium-high heat. Coat the pan liberally with olive oil spray.
  2. Add the ginger and garlic. Cook, stirring, for 30 seconds.
  3. Add the shiitake mushrooms. Cook, stirring occasionally, until the mushrooms are starting to brown and soften, about 3 minutes.
  4. Stir in the zucchini and cook until the zucchini is tender (but not mushy), 1 to 2 minutes.
  5. Add the cooked quinoa, sesame oil, soy sauce and spinach leaves. Stir until the quinoa is heated and the spinach just starts to wilt.
  6. Serve.
