Vegetarian Crockpot Chili Recipe
Chili is one of those dishes that is perfect to eat on a cold night, or on Sunday afternoon game days. This hearty version is full of protein-rich beans, veggies and seasonings, and will fill your home with delicious aromas all day.

Ingredients
- 1 can kidney beans rinsed
- 1 can black beans rinsed
- 1 can corn rinsed
- 1 cup yellow onion diced
- 1 cup red bell pepper diced
- 1 cup chopped carrot
- 1 cup chopped zucchini
- 2 cups tomatoes diced
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tbsp fresh lime juice
- 1 ½ tsp salt
Instructions
- Into a slow-cooker, add all the ingredients except the lime. Stir to mix everything within well.
- Close the cooker and cook for 4 to 5 hours on high, or 6 to 7 hours on low, stopping only when the vegetables are tender.
- Open the cooker and stir in the lime juice. You can add more salt to taste at this point if you wish. Serve and enjoy!
