Ingredients

  • 2 tablespoons diced tomatoes
  • 1/4 red bell pepper diced
  • 1/2 cup fresh spinach chopped
  • 1/4 teaspoon olive oil
  • 2 large eggs
  • salt to taste
  • black pepper to taste
  • 1/4 cup shredded Mozzarella cheese

Instructions

  1. Heat the olive oil in a nonstick skillet over medium heat.
  2. Whisk the eggs in a bowl, season with salt and pepper, and pour into the skillet, cooking until the edges start to set.
  3. Sprinkle the mozzarella cheese, tomatoes, spinach, and bell pepper over half of the omelet. Fold the other half over the filling and cook until the cheese melts.
  4. Carefully slide the omelet onto a plate and serve hot.
