Vegetarian Stir Fry Udon Noodles

Ingredients

  • 1 tablespoon vegetable oil sesame oil or avocado
  • 2 spring onion
  • 1 garlic minced, clove
  • 1/2 cup mushroom sliced
  • 1/2 cup flat bean cutted
  • 14 oz udon noodles
  • 1 cup sweet chili sauce
  • black pepper to taste

Instructions

  1. Cook udon noodles according to package instructions. I used packaged udon noodles, so I put them in hot water for a minute to separate them well, drain in cold water and set aside.
  2. Heat oil in a large skillet pan over high heat.
  3. Add garlic and the white part of the spring onion and stir-fry for 10 seconds.
  4. Add mushrooms and flat beans. Stir-fry for 3-4 minutes until vegetables are slightly tender.
  5. Add the cooked udon noodles, and the sauce. 
  6. Stir-fry for another 2-3 minutes until everything is evenly combined.
  7. Add the green part of the spring onion and serve.
