Ingredients

  • 2 tablespoons olive oil
  • 1 onion yellow, diced
  • 3 cloves garlic , minced
  • 4 cups vegetable broth
  • 29 ounces crushed tomatoes
  • 29 ounces diced tomatoes
  • 1 green bell pepper , diced
  • 1 red bell pepper , diced
  • 1 yellow bell pepper , diced
  • 2 teaspoons basil dried
  • 1 teaspoon oregano dried
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 cup rice , uncooked
  • 1 cup Parmesan Cheese , grated or shredded

Instructions

  1. To a large pot add the olive oil, onion, and garlic on medium heat.
  2. Cook, stirring often, for 5-6 minutes or until translucent.
  3. Add in the vegetable broth, crushed tomatoes, diced tomatoes, green bell pepper, red bell pepper, yellow bell pepper, basil, oregano, salt, pepper, and rice.
  4. Stir well, bring to a boil, then reduce to medium-low heat.
  5. Cook for 20 minutes until the rice is tender.
  6. Add in half the parmesan and mix, reserve the rest for garnish when serving.
