Vegetarian Taquitos

Vegetarian Taquitos are crispy rolled corn tortillas filled with a spicy blend of black beans, refried beans, and melted cheese. The filling is seasoned with chili powder, cumin, and salt, and the tortilla is briefly steamed to prevent cracking before frying to a golden crisp. These taquitos offer a satisfying texture and flavor combo, ideal for casual meals or appetizers served with salsa and sour cream.

Ingredients

  • 1 cup black beans , drained and rinsed
  • 1 cup refried beans vegetarian
  • 1-1.5 cup pepper jack cheese or cheddar cheese, grated
  • ½ tsp chili powder
  • ½ tsp cumin
  • ¼ tsp salt
  • 9 corn tortilla soft
  • 3 TBSP avocado oil or favorite frying oil, as needed

  1. Drain and rinse your black beans and gently combine with refried beans, grated cheese, chili powder, cumin, and salt.
  2. Want them spicy? Feel free to add hot sauce, minced jalapeno peppers, or even ground cayenne pepper to the mix.
  3. Heat a large skillet to medium heat with 1-2 Tablespoons of oil.
  4. While the skillet heats up, place 3 corn tortillas on a plate with a damp paper towel over them in the microwave for 15-20 seconds to steam the tortillas and prevent cracking.
  5. Add 2 Tablespoons of filling to each tortilla and roll tightly. Place in the hot oil, seam side down. Cook on each side until golden and toasty, then transfer to a small stack of dry paper towels.
  6. Working in batches, repeat for remaining taquitos, working with just 3 at a time for best results. Add extra oil, as needed to the skillet for remaining batches.
  7. Serve while hot and crispy with salsa and sour cream or your choice of dippers.

Notes

  • Use avocado oil or another high-smoke-point oil for frying to avoid burning.
  • Warm tortillas under a damp paper towel to prevent cracking while rolling.
  • Roll with the tortilla's firmer side outward for better structural support during frying.
  • Serve taquitos hot and crispy with salsa, sour cream, or preferred dips.
