Veggie Tortilla Rollups with Hummus

These easy vegetarian hummus veggie tortilla rollups are one of my favorite speedy lunches! They're super portable and great for work or school lunches for both kids and adults.

Ingredients

  • 1 flour tortilla large burrito-sized
  • 3-4 TBSP hummus (any flavor!)
  • 1-2 carrot
  • 2-4 broccoli florets
  • 1/8-1/4 cup cheddar cheese grated sharp

  1. First prep your veggies. Finely chop broccoli and peel and grate carrot. Coarsely grate your cheese or choose pre-shredded cheese for a shortcut!
  2. Spread a burrito-sized flour tortilla with your favorite flavor of hummus.
  3. Top with a heaty sprinkle of grated carrot, grated cheddar cheese, and chopped broccoli.
  4. Start at the edge of the tortilla and roll it, tightly, until you reach the opposite side. The hummus will help it stick! Fasten with a toothpick and chill in the fridge for 5 minutes to set. Cut into 8 pinwheels and serve with all your favorite lunch box fixin’s!

Notes

  • No hummus? No problem! Softened cream cheese also makes an excellent spread for these roll-ups.
  • Looking for a flavor boost? Try seasoning with your favorite dried herbs! I like adding a  teeny sprinkle dill and garlic powder to mine and. when I have it, some chopped green onion/scallions.
  • Ranch dressing or your favorite dip can be included in the lunch box for dunking! These roll ups are great ever which way - have fun with it!
