Ingredients

  • 1 pound elbow macaroni
  • 2/3 cup milk whole
  • 24 ounce Velveeta cheese , cut into chunks
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon paprika

Instructions

  1. Add pasta to a large pot of boiling water and cook 1 minute shy of the directions on the box.
  2. Reserve 1 cup of pasta water in case you need to thin the macaroni and cheese.
  3. Drain but don't rinse the pasta, then add it back to the pot.
  4. Turn the heat onto medium heat.
  5. Stir in the milk, cheese, salt, white pepper, ground mustard, and paprika.
  6. Bring to a simmer and stir, cooking until the cheese sauce has thickened.
  7. If sauce thickens too much add 1/4 cup of pasta water and stir to combine.
