Vinaigrette (French Dressing)

The vinaigrette is an emulsion of vinegar or lemon juice, oil, salt and pepper, to which mustard and/or aromatic herbs can be added.

Ingredients

  • 2 tablespoons red (or white wine vinegar)
  • 4 tablespoons olive oil (or vegetable oil)
  • 1 pinch salt
  • 1 teaspoon mustard , optional
  • ¼ teaspoon black pepper
  • garlic , shallot, scallion, chives, other fine herbs (optional)

Instructions

  1. Add the mustard into a bowl, add the vinegar and whisk.
  2. Season with salt and pepper.
  3. Gradually add the oil in a drizzle, whisking vigorously.
  4. Depending on taste, add 1 crushed garlic clove, 1 finely chopped shallot, 1 chopped scallion or fine herbs (chives, tarragon, chervil, parsley, etc.).

Notes

  • Although very often used in a vinaigrette, mustard is not essential. The authentic vinaigrette recipe does not contain mustard. Red or white wine vinegar can be replaced with another acid such as cider vinegar, balsamic vinegar or raspberry vinegar for example. It is also possible to replace it with lemon juice. Vegetable oil can be mixed with olive oil or flavored oils such as walnut or hazelnut oil.
