Waldorf Salad

This Waldorf Salad recipe combines tender chicken, crisp apples, grapes, celery, and walnuts in a creamy Greek yogurt dressing. Perfect on a bed of greens!

Ingredients

  • ½ cup Greek yogurt
  • 1 lemon zest and juice
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 cups Cooked Chicken Breast diced
  • 3 celery stalks diced
  • 1 cup red seedless grapes halved
  • 1 cup chopped walnuts
  • 1 green apple diced
  • green leaf lettuce for serving

Instructions

  1. In a large bowl, whisk together yogurt, lemon zest, lemon juice, salt and pepper. Add chicken, celery, grapes, walnuts and apple and fold until everything is evenly coated.
  2. Serve over a bed of green leaf lettuce.

Notes

  • Storage: Store Waldorf salad in an airtight container in the refrigerator for up to 2 days. When ready to enjoy, give a quick stir to incorporate some of the released juices from apples and grapes.
  • Tips:
  • Chill salad in the fridge for 30 minutes before serving to allow the flavors to meld together.
  • Use your favorite method to cook chicken breast, or use leftover roasted chicken.
