Ingredients

  • 3 tablespoons yogurt plain, Greek
  • 3 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon honey can use pure maple syrup
  • 1/2 teaspoon kosher salt
  • 2 cups apple diced
  • 1 cup red grapes halved
  • 1 cup celery diced
  • 1 cup pecans roughly chopped, toasted
  • 1 tablespoon parsley finely chopped
  • Boston lettuce for serving, optional

Instructions

  1. In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, honey, and salt. Stir until well combined. Set aside.
  2. In a large bowl, add the apples, grapes, celery, pecans, and parsley.
  3. Add the dressing and stir until well coated. Serve plain or in lettuce cups.

Notes

  • You will need 2 large or 3 medium apples. I like to use Granny smith or Honeycrisp apples.
  • Store the salad in an airtight container in the fridge for up to 3 days.
