Ingredients

  • 330 grams all-purpose flour 2 3/4 cups
  • 230 grams salted butter 1 cup, room temperature
  • 130 fine sugar 130 grams 2/3 cup)

  1. Preheat the oven to 375º F (190 ºC), and set the rack to the middle position.
  2. Add the butter and sugar into a mixing bowl of a stand mixer and on medium speed until the mixture is soft and creamy.
  3. Add the flour and mix just until the shortbread dough comes together.
  4. Transfer the dough to a 9X9 inch greased baking pan, pat the dough down, then place parchment paper over it.
  5. Use a cup or small rolling pin to evening spread the dough throughout the pan. The thickness of the dough in the pan shout be about 3/4 inches or 2 centimeters.
  6. Prick the top with a fork to make the classic Walker’s appearance.
  7. Bake for 25-30 minutes in the preheated oven.
  8. Remove from the oven and sprinkle some sugar over the top.
  9. Cut immediately into 1 1/2 inches by 3 inches while the shortbread is still hot.
  10. Cool and serve.
