Walnut Tacos

This Vegan Walnut Taco Meat is a great alternative to ground beef. Quick and easy to make, these walnut tacos are a delicious and filling meatless recipe!

Ingredients

  • 1 ½ cups walnuts
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • Soft tacos Mexican slaw, salsa, and guacamole for serving

Instructions

  1. Preheat the oven to 350°F, and grease a baking sheet.
  2. Add walnuts to a food processor and process until mixture is roughly chopped. Pulse the remaining ingredients in the food processor until the mixture is evenly ground.
  3. Transfer to the greased baking sheet. Bake for 15-20 minutes, stirring halfway through to prevent over-browning.
  4. Serve in tacos, burritos, quesadillas, bowls and anywhere you would use regular taco meat.

Notes

  • Storage: Store any leftovers in an airtight container. They will last up to 7 days in the fridge. Reheat in a skillet or in the oven.
