Warm Kale & Artichoke Dip Recipe

Warm Kale and Artichoke Dip Recipe is a super simple and addicting. It takes about 20 minutes tops in just one pan to create this tasty dip!

Ingredients

  • 1 1/2 tablespoons butter
  • 1/2 yellow onion diced
  • 1 clove garlic grated
  • 2 cups kale chopped, baby
  • 3/4 cup artichoke hearts diced & marinated
  • 4 oz. cream cheese low fat
  • 1/2 cup sour cream low fat
  • 1/4 cup Parmesan Cheese grated
  • 1/3 cup cheddar cheese grated
  • salt to taste
  • black pepper to taste
  • 2-3 tablespoons heavy cream or half & half, depending on how thick you want the dip to be

Instructions

  1. Saute onion in butter over medium heat until softened, 5 minutes. Stir in garlic and cook until fragrant, 2 minutes. Stir in kale until wilted. Add in artichoke hearts, cream cheese, sour cream, cheeses, and salt & pepper. As you stir, the cream cheese should melt into the mixture nicely along with the other two kinds of cheese. Pour in the desired amount of cream until dip has reached desired consistency. 
  2. Spoon into a bowl and serve with vegetables, chips, crackers, etc. OR place into lightly greased oven safe dish and bake at 350 degrees until hot and bubbly, 15 minutes or so. Then serve.
