Warm Mixed Berry Compote

Greek Yogurt w/ Warm Mixed-Berry Compote

Ingredients

  • 2 cups orange juice fresh
  • 4 tablespoon cornstarch
  • 2 tablespoons Grand Marnier or other orange liquer
  • ½ cup honey
  • ¼ cup sugar
  • 6 cups mixed berries frozen
  • 1 tablespoon thyme fresh leaves
  • orange zest of 1
  • salt a pinch, sea salt
  • Greek yogurt
  • Fruit if desired, fresh, for garnish

Instructions

  1. Combine cornstarch with 3 tablespoons of the orange juice in a small bowl. Set aside.
  2. Combine remaining orange juice, Grand Marnier, honey and sugar in a medium-size sauce pan over medium-high heat. Bring to a boil, then reduce to a constant simmer and cook, uncovered, for 10 minutes.
  3. Add frozen berries and return to a boil. Cook for 1 minute, then slowly add cornstarch mixture and cook, stirring continuously until compote is thick and glossy 1-2 minutes. Remove from heat and add fresh thyme orange zest and a pinch of sea salt. Stir to combine. Taste and add a bit more honey, if needed. The amount of honey will depend on your taste and the sweetness of your orange juice. Let cool a bit, but serve while still warm over Greek yogurt***. This compote keeps well for at least a week in the refrigerator and also freezes well. Thaw overnight in refrigerator.
  4. For the garnish pictured, I just cut skewers to fit my glasses, then threaded them with fresh fruit and added a sprig of thyme.
  5. Notes:
  6. * ~ Grand Marnier can be omitted if you prefer to cook sans alcohol. The sauce will still be wonderful!
  7. ** ~ I used a frozen, pre-packaged mix with blackberries, blueberries, raspberries and strawberries. Use any of these frozen berries that you prefer in any ratio.
  8. *** ~ This is also wonderful over ice cream, frozen yogurt, pancakes, waffles, French toast, crepes, cheesecake, panna cotta, etc.
