Warm Steak and Potato Salad

If you love steak and potatoes, you have to try this Warm Steak and Potato Salad! It has oven roasted potatoes, tender juicy steak, cheese, and veggies all on top of a bed of arugula. Hearty, delicious and perfect for meal prep!

Ingredients

To Assemble Each Salad:
  • 3 cups arugula or other greens of choice
  • 3/4 cup Steak Bites (73g)
  • 3/4 cup Roasted Potatoes (83g)
  • 1/4 cup fat free feta cheese (28g)
  • 2 Tbsp red onions (20g) finely diced
  • 2 Tbsp cucumber (20g) finely diced
  • 1/4 roma tomato (30g) diced
For the Steak Bites:
  • 1 lb. flank steak top sirloin also works
  • 1 Tbsp worcestershire sauce (15g)
  • 1/2 Tbsp olive oil (8g)
  • 1 tsp of each: salt, Italian seasoning
  • 1/2 tsp or each: black pepper, onion powder
For the Roasted Potatoes:
  • 1.5 lb. yukon petite potatoes
  • 1 Tbsp olive oil (15g)

Instructions

For the Roasted Potatoes:

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Prepare the potatoes by washing them and dicing into 1-inch pieces. Dry potatoes if needed and add to the baking sheet. Spray potatoes with cooking spray (this helps us get by with using less oil), then add the olive oil, herbs, and seasonings. Using your hands, toss around until the potatoes are evenly coated.
  3. Bake for 30-35 minutes or until cooked to liking.
For the Steak Bites:
  1. Marinate steak with Worcestershire sauce, olive oil and seasonings (for 10 minutes if time allows for more flavor).
  2. Spray a skillet with nonstick cooking spray and add the steak. Cook on medium-high heat for 2-3 minutes depending on its thickness, then flip it over and cook another 2-3 minutes.
  3. Let the steak rest for 5 minutes before cutting it into slices (cut against the grain).
To Assemble Each Salad:
  1. To a bowl or meal prep container, add the arugula.
  2. Top with the steak bites, roasted potatoes, feta cheese, red onions, cucumber, and tomatoes.
  3. Follow amounts listed in the ingredients for one serving. This recipe makes 5 servings of steak and potatoes. Top with your favorite salad dressing and enjoy!
