Watermelon and Cucumber Salad
This Watermelon Feta and Cucumber Salad is the perfect way to celebrate a warm and sunny Spring day, especially when you pair it with a light glass of wine. This healthy salad is full of watermelon, cucumber, feta, avocados, and mint. {gluten free}
Ingredients
- 2 cups watermelon cubed
- 1 cup English cucumber sliced
- ½ cup feta cheese cubed
- ½ avocado cubed
- 10 mint leaves torn
- ½ cup pistachio
Dressing
- ¼ cup olive oil
- 3 tablespoon lime juice fresh
- salt not too much because feta is salty
Instructions
- Add all salad ingredients in a large bowl except pistachios.
- In a small jar add all dressing ingredients and shake well. Dress salad generously with dressing. The lime juice should keep the avocado from browning. Toss gently.
- Add pistachios right before serving so they don't get soggy.
