Ingredients
- 2 cups diced seedless watermelon, lay on paper towel to drain
- 1 cup diced jicama
- 2 tablespoon chopped cilantro
- ¼ cup diced red onion
- 2 tablespoon fresh lime juice
- 1 tablespoon brown sugar or honey
- salt to taste
Instructions
- Whisk the lime juice and brown sugar. Set aside.
- Gently toss all the other ingredients and pour on lime juice mixture. Serve with tortilla chips.

Notes
- This will store in the refrigerator for only about a day or so because the watermelon starts to break down. I would make it and serve it immediately for best flavor.
