Watermelon and Jicama Salsa

Ingredients

  • 2 cups diced seedless watermelon, lay on paper towel to drain
  • 1 cup diced jicama
  • 2 tablespoon chopped cilantro
  • ¼ cup diced red onion
  • 2 tablespoon fresh lime juice
  • 1 tablespoon brown sugar or honey
  • salt to taste

Instructions

    Cup of Yum
  1. Whisk the lime juice and brown sugar. Set aside.
  2. Gently toss all the other ingredients and pour on lime juice mixture. Serve with tortilla chips.

Notes

  • This will store in the refrigerator for only about a day or so because the watermelon starts to break down.  I would make it and serve it immediately for best flavor.
