Watermelon frozen gin and tonic
Frozen gin and tonic made with fresh watermelon is the perfect cocktail on hot summer days. It's also great for serving a crowd.

- 6 cups frozen watermelon cubes
- 1 cup gin
- 500 ml (2 cups / 17oz) tonic water
- 2-3 tbsp lemon juice
- fresh mint to serve
- watermelon wedges to serve
Instructions
- To freeze the watermelon: Slice the skin off fersh watermelon then cube. Place the watermelon in an even layer on a freezer-proof tray and place in the freezer until frozen.
- To make the frozen gin and tonic, place the frozen watermelon, gin, tonic water and lemon juice in a blender and blend until smooth.
- Pour into glasses and serve with fresh mint and a watermelon wedge.
