Ingredients

  • 4 cups deseed watermelon diced into small chunks
  • 1 Jalapeño deseeded and finely diced
  • ½ cup green bell pepper finely diced
  • ½ cup chopped mint
  • 4 tablespoons lime juice
  • pinch of salt
  • tortilla chips to serve

Instructions

  1. Place the watermelon, jalapeno, green bell pepper, mint, lime juice, and salt in a medium bowl and mix together until combined. Cover with plastic wrap and place in the refrigerator for 15 minutes.
  2. Uncover and serve with tortilla chips.
