Juicy fresh watermelon popsicles are the perfect summer treat. Made with only a few ingredients including whole fruit, these treats are perfect for the whole family.

- 4 cups watermelon diced
- 2 teaspoons honey
- 1 medium lime
Instructions
- Slice watermelon into large chunks.
- In a food processor, blend watermelon until it's the consistency of a smoothie.
- Strain watermelon juice with a fine mesh seive to remove any seeds and pulp.
- Add lime juice and honey to watermelon juice, then stir well until the sugar fully dissolves.
- Pour the watermelon juice into popsicle molds. Freeze for at least three hours or until frozen solid. Often it's easiest to freeze overnight. Enjoy!

Notes
- 2 teaspoons lime juice can be substituted if you don't have fresh lime on hand. It can be left out, but the flavor really makes the popsicles pop a little more.
- Other sugars can be substituted for honey, including white sugar. Taste your watermelon juice before adding sweetener then sweeten to taste. A really juicy sweet watermelon in season may not need extra sweetener at all.
- This recipe makes 6 popsicles that are 3.2 ounces. If your popsicle mold holds more or less liquid, you may make a few more or fewer popsicles.
