Watermelon Salad
Watermelon Salad mixes juicy cubed watermelon with crisp cherry tomatoes, fresh chopped red onion, and torn basil leaves. A lime juice and honey dressing adds bright sweetness balanced by a touch of black pepper. This salad combines refreshing fruit and herbs for a light, hydrating side that's ideal for summer meals or paired with grilled main dishes.
Ingredients
- 5 cups watermelon cubed
- 1 ½ cups cherry tomato or grape tomatoes, halved, yellow
- 1 small red onion chopped
- ½ cup basil freshly torn leaves
- ¼ cup lime juice freshly squeezed
- 2 TB honey pure
- black pepper freshly ground, to taste
Instructions
- In a large bowl, combine all ingredients. Use rubber spatula to gently fold together until well combined.
- Cover and chill no more than 1 hour before serving (watermelon salad is best served immediately.)
Notes
- Keep the watermelon salad tightly sealed and chilled to maintain freshness and prevent excess liquid.
- Serve the salad soon after mixing to avoid sogginess from the watermelon releasing water.
- Lightly toss the salad again if chilling before serving to redistribute any accumulated juice.
- Optional additions include roasted walnuts, pine nuts, or crumbled feta for added texture and flavor.
- This salad complements grilled dishes like chicken breast and naan bread for a complete meal.
