Salad Ingredients
- 5 cups watermelon cubed
- 2 large cucumbers peeled, sliced and quartered
- 1 ¼ cups feta cubed
- 2 tablespoons fresh mint finely chopped
Dressing Ingredients
- 1 tablespoon extra virgin olive oil
- 1 lime juiced (about 2 tablespoons juice)
- 1 teaspoon honey
Instructions
- Make the dressing. Whisk the dressing ingredients together in a small bowl.
- Stir the salad. Stir the watermelon, cucumber, mint, and dressing in a large salad bowl.
