Ingredients

  • 4 cups watermelon cubed
  • 2 cups grape tomatoes sliced in half
  • ¼ cup fresh mint chopped
  • ½ cup red onion thinly sliced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • ¼ cup feta cheese crumbled

Instructions

  1. Add the watermelon, tomatoes, mint and onion to a large bowl.
  2. Add the balsamic vinegar and olive oil, toss to coat.
  3. Top with the feta cheese and serve.

Notes

  • Omit the feta cheese to make this recipe vegan.
  • This recipe is naturally gluten free.
  • If making ahead of time, wait to add the balsamic vinegar, olive oil and feta cheese, until right before serving.
