Watermelon Salad with Feta and Mint

Watermelon salad with blackberries sits atop a bed of arugula and spinach, all drizzled with a sweet balsamic vinaigrette and garnished with fresh mint and crumbled feta.

Ingredients

Dressing
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 2 tablespoons shallots finely diced
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • salt and pepper to taste
Salad
  • 2 cups arugula washed and dried
  • 2 cups baby spinach leaves
  • 2 cups watermelon chunks bite-sized
  • 1-2 cups blackberries
  • ½ cup crumbled Feta cheese
  • 4-6 leaves fresh mint diced

Instructions

  1. Combine the dressing ingredients into a mason or other lidded jar. Shake to combine completely. Taste test then add more salt/honey as desired, then set aside.
  2. In a large salad bowl, toss the spinach and arugula together. Top with the watermelon and blackberries. Toss lightly to mix.
  3. Drizzle the desired amount of dressing over top of the salad, tossing lightly to coat the ingredients with the dressing.
  4. Once done, sprinkle the feta cheese and the diced mint leaves over the top.
  5. Serve in bowls immediately.

Notes

  • Adjust the dressing ingredients to your own personal preference.
