Ingredients

  • 6 cups watermelon cubed
  • 2 cucumber chopped, Persian
  • 1/2 cup kalamata olives halved
  • 1/2 cup walnuts chopped
  • 1/2 cup mint chopped, leaves
  • 1/2 cup feta cheese cubed
  • 1 lime
  • 1/8 tsp kosher salt
  • 2 tbsp olive oil

Instructions

  1. Place the watermelon cubes in a large bowl. Add in the cucumbers, kalamata olives and walnuts.
  2. Add the cubed feta and chopped mint. Using a microplane, zest the lime and add it to the salad.
  3. Add the lime juice, salt and olive oil.
  4. Give it a toss and serve immediately.

Notes

  • Cube or crumble the feta cheese based on your texture preference; more feta will increase saltiness.
  • Serve the salad immediately or within two days refrigerated in an airtight container to prevent sogginess.
  • For variation, add vegetables such as avocado or red onion to enhance flavor complexity.
