Wendy's Summer Berry Chicken Salad

Ingredients

  • 1 boneless, skinless chicken breast
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 2 teaspoons vegetable oil
  • 4 ounces spring lettuce mix
  • 1/4 cup blackberries
  • 1/4 cup sliced strawberries
  • 1 tablespoon feta cheese
  • 5 or 6 pieces dried apple chips
  • 2 tablespoons blackberry vinaigrette or other berry vinaigrette dressing

Instructions

  1. Season chicken breast with salt, pepper, garlic powder, and dried parsley.
  2. Place a small skillet over medium heat. Add vegetable oil and allow the pan to get hot. The oil should almost smoke.
  3. Add the chicken and cook it on each side for 5 to 7 minutes or until the chicken is done (internal temperature at 165°F).
  4. Remove chicken from skillet and allow it to rest for about 5 minutes.
  5. Slice the chicken into bite-sized pieces.
  6. Place salad greens in a bowl.
  7. Top the salad greens with blackberries, strawberries, feta cheese, apple chips, and chicken pieces.
  8. Pour the vinaigrette dressing over the salad and enjoy!
