Whipped Double Chocolate Chip Chia Pudding

Ingredients

  • 1/2 cup plain or vanilla Greek yogurt
  • 3/4 cup full-fat canned coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons ground sweet cocoa
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons honey
  • 1 vanilla bean, beans scraped
  • 1 pinch of salt
  • 1/4 cup chocolate chips/chunks, chopped

  1. In a large bowl, whisk together the yogurt, milk, chia seeds, both cocoas, honey, scraped vanilla beans and salt until combined. Cover the bowl with plastic wrap and place it in the fridge to chill and thicken, for about 4 hours or even overnight. I usually go back and stir the mixture a few times while it sits to stir out any lumps. You also might want to take a little taste to see if you’d like it to be sweeter.
  2. After the time is up and the pudding is thickened, add it to a blender or food processor and blend until thick and pureed. Once it’s smooth, I like to place it back in the fridge for an hour or so to be chilled. Top with (or stir in) chocolate chips before serving.
