Whipped Feta

Ready in under 5 minutes, this creamy Whipped Feta is perfect with some homemade flatbread or pita dipped into it. This is definitely one for feta fans.

Ingredients

  • 200 g feta
  • 250 g Greek yogurt
  • 0.5 lemon juice and zest only
  • 2 tablespoon olive oil
  • 1 pinch sea salt and ground black pepper
  • 2 tablespoon fresh mint finely chopped
  • 2 tablespoon pine nuts

Instructions

  1. Put 250 g Greek yogurt and 200 g Feta into a blender jug.
  2. Add juice and zest of 0.5 Lemon, 2 tablespoon Olive oil and 1 pinch Sea salt and ground black pepper.
  3. Blend until you have your desired consistency.
  4. Transfer to a bowl and swirl the top with the back of a spoon. Top with 2 tablespoon Fresh mint and 2 tablespoon Pine nuts and more oil (optional).

Notes

  • When zesting the lemon, be careful to avoid the white pith, as that can be really bitter.
  • Use fresh herbs rather than dried.
  • Try to use the best quality feta you can. If you are using a lower quality one, it will be a little drier so you will need to add a little extra olive oil to the mixture before blending.
  • Whipped feta is best served immediately as it will thicken as it sits.
