Whipped Feta Dip

Whipped Feta Dip combines roasted garlic, feta, and cream cheese whipped with olive oil, lemon juice, and fresh herbs for a creamy, tangy spread. Roasting the garlic softens its flavor and adds sweetness while the feta and cream cheese blend to a smooth texture. Ingredients

  • 1 head garlic
  • 2 tablespoons olive oil plus 1 teaspoon
  • 8 ounces feta cheese room temperature
  • 8 ounces cream cheese room temperature
  • 1 tablespoon lemon juice fresh
  • 1 teaspoon thyme leaves
  • 1 teaspoon parsley fresh

Instructions

  1. Preheat oven to 400° F.
  2. Cut ¼” off the top of the head of garlic, leaving the root and skins intact. Drizzle 1 teaspoon of olive oil over top and wrap the garlic tightly in foil.
  3. Bake the garlic for 30 minutes, or until fork tender. Remove from the foil and cool to room temperature.
  4. After the garlic has cooled, place the feta, cream cheese, olive oil, and lemon juice in the bowl of a food processor and pulse on high speed until smooth and creamy.
  5. Squeeze 5 garlic cloves out of their skins and place them in the food processor, along with the thyme and parsley. Pulse until the garlic is broken up and well combined. Save the remaining garlic cloves for another recipe or add a few more to the dip– up to you!
  6. Season with salt and pepper to taste (or add a pinch of red pepper flakes for a bit of heat). Serve with pita chips, fresh veggies, crackers or crusty bread slices.

Notes

  • Store the dip in an airtight container in the refrigerator for 3-4 days to maintain freshness.
  • Replace garlic and thyme with ½ teaspoon of basil, oregano, or rosemary for different herbal notes.
  • Substitute half of the cream cheese with sour cream or plain Greek yogurt for a lighter texture.
  • Add red pepper flakes for spiciness according to taste, or honey for a touch of sweetness.
