Ingredients
For the Roasted Tomatoes:
- ½ cup grape tomatoes
- 2 cloves garlic sliced
- 2-3 prigs thyme
- 1½ tbsp olive oil
- 1 pinch salt and pepper
For the Whipped Feta:
- 1 cup feta cheese
- 5 tbsp soften cream cheese or more
- salt and pepper
- 3 tsp olive oil
To serve:
- mini cucumbers sliced
- mini red peppers
- Crostini
Instructions
- Toss the grape tomatoes, sliced garlic, thyme, olive oil, and a pinch of salt and pepper together and air fry in a parchment-lined basket at 350F for 10 to 15 minutes (or on a parchment-lined sheet pan in an oven).
- Combine the feta cheese, soften cream cheese, salt and pepper, and olive oil in a food processor and blend until smooth. Adjust seasoning to taste.
- Serve the whipped feta with roasted tomatoes on top and a side of sliced cucumbers, mini bell peppers, and crostini.
