Ingredients

For the Roasted Tomatoes:
  • ½ cup grape tomatoes
  • 2 cloves garlic sliced
  • 2-3 prigs thyme
  • 1½ tbsp olive oil
  • 1 pinch salt
  • 1 pinch black pepper
For the Whipped Feta:
  • 1 cup feta cheese
  • 5 tbsp cream cheese or more, soften
  • salt
  • black pepper
  • 3 tsp olive oil
To serve:
  • cucumber sliced, mini
  • red pepper mini
  • Crostini

Instructions

    Cup of Yum
  1. Toss the grape tomatoes, sliced garlic, thyme, olive oil, and a pinch of salt and pepper together and air fry in a parchment-lined basket at 350F for 10 to 15 minutes (or on a parchment-lined sheet pan in an oven).
  2. Combine the feta cheese, soften cream cheese, salt and pepper, and olive oil in a food processor and blend until smooth. Adjust seasoning to taste.
  3. Serve the whipped feta with roasted tomatoes on top and a side of sliced cucumbers, mini bell peppers, and crostini.
