Whipped Honey Goat Cheese Crostini with Simple Strawberry Sauce

Ingredients

  • 4 oz goat cheese (honey or regular)
  • 8 large frozen ripe strawberries
  • sweetener of your choice, to taste (sugar, honey, agave, stevia, etc...)
  • pinch of salt
  • 6-8 lices baguette lightly toasted
  • a few spoonfuls of your favorite honey
  • basil for garnishing (totally optional)

  1. Pre-heat oven or toaster oven to 350 degrees F.
  2. Add your goat cheese to a food processor or blender and whip for a few minutes until fluffy and spreadable.
  3. Next microwave your strawberries 2 minutes on high. You can also whip this up on the stove top in about 5-6 minutes so. Choose the method that works best for you!
  4. Sweeten the berries to taste, add a pinch of salt to amplify flavors, and whisk with a fork as it bubbles and thickens for about 2-3 minutes.
  5. Once your oven is ready, toast your crostini until crispy and golden.
  6. Spread each toast with whipped goat cheese and top with a hearty drizzle of honey.
  7. Add a spoonful of strawberry sauce on top an garnish with a sprig of basil.
  8. Dig in!
