White Bean Soup with Pasta

Ingredients

  • 2 tablespoons butter
  • ½ cup onion diced
  • ½ cup carrot diced
  • ½ cup celery diced
  • 2 cloves garlic minced
  • 1 teaspoon basil dried
  • 1 teaspoon parsley
  • ½ teaspoon oregano
  • 8 cups chicken broth
  • 1 cup pasta see note
  • 14 ounces White beans 1 can

Instructions

    Cup of Yum
  1. In a pot or dutch oven, heat butter over medium heat.
  2. Add onion, carrots, celery and herbs and cook until translucent.
  3. Add garlic and cook until fragrant, about 30 seconds.
  4. Add chicken broth.
  5. Add pasta and white beans.
  6. Bring to a simmer and simmer for 10 minutes or until pasta is al dente.
  7. Garnish with fresh parsley and parmesan cheese.

Notes

  • You can use any tubular pasta you'd like.
