White Bean Turkey Chili
A healthy, nutritious soup full of protein and healthy carbs will leave you full and happy.
Ingredients
- 1 onion diced
- 1 Tablespoon neutral cooking oil may use less, generic cooking oil
- 1 jalapeño finely diced (optional)
- 1 lb. ground turkey
- 2 teaspoons chili powder
- 2 teaspoons cumin powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- (2) ounce green chilies canned
- (2) oz white cannellini beans in seasoning, or great northern beans, canned
- (2) .5 oz. chicken broth 29 ounces total, canned
- 2 cups Monterey jack cheese shredded, or Pepper Jack cheese
Optional Toppings:
- avocado diced
- cilantro
- jalapeño
- sour cream
- corn chips
Instructions
- Heat large skillet or pot over medium-high heat. Add oil, onion, and jalapeno, if you are using. Saute for 4-5 minutes until onion starts to become tender. Add ground turkey and cook for 7-8 minutes or until turkey starts to become golden brown.
- Add chili powder, cumin, salt, and pepper. Stir to coat turkey.
- Reduce heat to medium-low.
- Stir in green chilies, beans, and chicken broth.
- Simmer for 10-15 minutes or until onions are soft.
- Stir in 1 1/2 cups of cheese, reserving 1/2 cup for garnish.
- Check for seasoning.
- Ladle into soup bowls and top with remaining cheese, avocado, cilantro, and sour cream.
