White Bean Turkey Chili

Ingredients

  • 1 onion diced
  • 1 Tablespoon oil may use less
  • 1 Jalapeño finely diced (optional)
  • 1 lb. ground turkey
  • 2 teaspoons chili powder
  • 2 teaspoons cumin powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • (2) 4 ounce cans Green Chilies
  • (2) 15 oz cans White Cannellini or Great Northern Beans in seasoning
  • (2) 14.5 oz. cans chicken broth 29 ounces total
  • 2 cups Monterey Jack or Pepper Jack cheese shredded
Optional Toppings:
  • avocado diced
  • cilantro
  • Jalapeño
  • sour cream
  • corn chips

Instructions

    Cup of Yum
  1. Heat large skillet or pot over medium-high heat. Add oil, onion, and jalapeno, if you are using. Saute for 4-5 minutes until onion starts to become tender. Add ground turkey and cook for 7-8 minutes or until turkey starts to become golden brown.
  2. Add chili powder, cumin, salt, and pepper. Stir to coat turkey.
  3. Reduce heat to medium-low.
  4. Stir in green chilies, beans, and chicken broth.
  5. Simmer for 10-15 minutes or until onions are soft.
  6. Stir in 1 1/2 cups of cheese, reserving 1/2 cup for garnish.
  7. Check for seasoning.
  8. Ladle into soup bowls and top with remaining cheese, avocado, cilantro, and sour cream.
