White Beans with Tomato and Sausage

These hearty White Beans with Tomato and Sausage make a quick and delicious weeknight meal. Serve it in a bowl like stew or spooned over toast.

Ingredients

  • 1 Tbsp olive oil $0.32
  • 2 links Italian Sausage (about 8oz. total) $1.99
  • 1 yellow onion $0.32
  • 2 cloves garlic $0.16
  • 1 28oz. can crushed tomatoes $1.49
  • 1/2 tsp dried basil $0.05
  • 1/2 tsp dried oregano $0.05
  • 1 pinch crushed red pepper (optional) $0.02
  • freshly cracked black pepper $0.03
  • 2 15oz. cans great northern beans $1.38
  • 4 oz. frozen chopped spinach (1/4 of a 1 lb. bag) $0.40
  • salt to taste $0.02

Instructions

  1. Add the olive oil and sausage links to a large pot and cook over medium-low heat until golden brown on the outside and slightly firm (about 5 minutes). Remove the sausage to a cutting board and slice them into rounds. Return the sausage slices to the pot.
  2. Continue to sauté the sausage until fully browned. While the sausage is cooking, dice the onion and mince the garlic. Add the onions and garlic to the pot and continue to sauté until the onions are soft and transparent. The moisture from the onions should dissolve any browned bits of sausage from the bottom of the pot.
  3. Once the onions are soft, add the can of crushed tomatoes, dried basil, oregano, red pepper flakes, and a healthy dose of freshly cracked pepper (15-20 cranks of a pepper mill). Stir to combine.
  4. Empty the two cans of Great Northern beans into a colander and rinse with cool water. Let the excess water drain away, then add the beans to the pot along with the frozen chopped spinach (no need to thaw). Stir the contents of the pot and allow them to heat through, stirring occasionally
  5. (about 10 minutes). Taste and add salt if needed (1/4-1/2 tsp). If a thicker mixture is desired, let the pot simmer longer until the sauce has reduced. Serve hot with crusty bread for dipping.
