Ingredients

  • 1 pound pasta shells small
  • 1/2 cup butter unsalted
  • 1/2 cup flour
  • 1/2 teaspoon black pepper coarse ground
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground mustard
  • 4 cups milk whole
  • 2 cups cheddar cheese shredded, sharp, white
  • 2 cups jack cheese , shredded

Instructions

  1. Cook the pasta 1 minute shy of the instructions on the box, drain and set aside (do not rinse).
  2. In a large pot on medium heat add the butter and flour.
  3. Stir well until flour and butter are well incorporated.
  4. Cook flour for 30 seconds, stir in black pepper, salt, paprika and ground mustard.
  5. In a very slow stream whisk in the milk until creamy and well combined.
  6. Bring to a simmer and cook for 5-7 minutes or until thickened.
  7. Add in the cheddar cheese and jack cheese, stirring until creamy.
  8. Stir in the pasta until well coated.
  9. Serve immediately.
