White Chocolate Cranberry Cookies

Ingredients

  • ¾ cup unsalted butter softened to room temperature
  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 egg at room temperature
  • 2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoon cornstarch
  • 1 teaspoon baking soda
  • ¾ cup white chocolate chips
  • ¾ cup dried cranberries

Instructions

  1. Line a cookie sheet with parchment paper set aside.
  2. In a large bowl cream butter and sugars together until light and fluffy. Beat in egg and vanilla scraping sides of bowl as you go.
  3. Mix in flour, cornstarch and baking soda. Stir in the white chocolate chips and dried cranberries.
  4. Chill dough for at least 1 hour and up to 3 days.
  5. Preheat oven to 350 degrees Fahrenheit.
  6. Drop balls of dough on lined cookie sheets. Top with extra white chocolate chips if desired.
  7. Bake 8-9 minutes in preheated oven at 350 degrees Fahrenheit until barely golden brown. Cool on cookie sheet for 5-10 minutes. They continue to firm as they sit on the cookie sheets. Remove to wire rack.

  • Do not drop cookie dough onto warm cookie sheets. Let them cool before making next batch.
