White Chocolate Cranberry Oatmeal Balls

These White Chocolate Cranberry Balls are a winter snack dream! Packed with wholesome ingredients, healthy fiber and protein, these bites are just what you need when you need a quick on-the-go snack or afternoon treat!

Ingredients

  • 2 cups rolled oats (160g)
  • 1/3 cup vanilla protein powder (40g)
  • 1/3 cup peanut butter (80g)
  • 1/3 cup sugar free pancake syrup (80g) or pure maple syrup
  • 2 Tbsp chia seeds (20g)
  • 2 Tbsp milk (30g) more if needed
  • 3 Tbsp dried cranberries
  • 3 Tbsp white chocolate chips (45g)

Instructions

  1. Add all the ingredients (except the cranberries and white chocolate chips) to a food processor and mix until all ingredients are combined. If your food processor is too small, at least blend the oats to break them down, then you can add everything else and mix together in a bowl.
  2. Add more milk (a tiny bit at a time) if needed if the mixture is too dry to roll into balls.
  3. Fold in the cranberries and white chocolate chips.
  4. Scoop out 18 balls, about 2 tablespoons (or 28g) in size. Roll into balls with your hands. Rolling tip so it doesn't stick to your hands: I like to wear disposable gloves for easy clean up! Or you can dampen your palms with a little water or nonstick spray to help prevent the sticking.
  5. Chill balls for 30 minutes before enjoying. Keep balls stored in an airtight container in the fridge for 1 week or in the freezer for 3 months.

Notes

  • Keep balls stored in an airtight container in the fridge for 1 week or in the freezer for 3 months.
  • Not all protein powders have the same consistency and some will absorb liquid more easier than others, which might cause your protein ball mixture to seem a little dry or crumbly. Just add a little water or milk, about a teaspoon at a time, until they are easier to roll into balls. Add liquid slowly – you also don’t want to over do it!
