- 1 cup softened unsalted butter
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 (3.4-ounce) package pumpkin spice instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups white chocolate chips
Instructions
- Preheat the oven to 350 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.
- In a large bowl add 2 ¼ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, and 1 (3.4-ounce) package pumpkin spice instant pudding mix. Stir to combine and set aside.
- In a stand mixer cream together 1 cup softened unsalted butter, ¾ cup brown sugar, and ¼ cup granulated sugar. Add 2 large eggs and 1 teaspoon vanilla extract and mix to combine.
- Add the flour mixture to the butter mixture and mix to combine.
- Mix in 2 cups white chocolate chips.
- Scoop and roll the cookie dough into balls. Place them 2 inches apart on the prepared baking sheet.
- Bake for about 10 minutes or until slightly golden. Let cool and enjoy!
